Carcassone is an relative easy to learn game however it can escalate.

Agree on Arkham Horror, Betrayal at House on the Hill, Carcasonne, Illuminati, Acquire.
Adding Ticket to Ride, Kingsburg, Winner's Circle, Stone Age, Puzzle Strike, Fürstenfeld, and Game of Thrones.
I hate Settlers and I'm not even sure why? It feels so much like Yahtzee to me, but then so do several games I do enjoy (Kingsburg for instance.)

Pretty much anything Fantasy Flight - at worst, the game will be decent, and I've always had fun playing anything of thiers that I've tried.
