Thats part of what I am debating internally right now. Just how much control to give. I really like the idea of writing up a solid history, influences, motivations etc, make an outline, and just give it to the players, but having a few control points might be a good idea ass well.
It all depends how involved you want the family as a whole to be in whatever metaplot you're crafting. If you want them especially involved, perhaps think about creating an NPC family member-per-sphere so people aren't squabbling over who they want to get involved. That'd take some work given how secretive the factions are, but probably worth it.

I would argue that perhaps the family overlord (matriarch, patriarch, whatever) should be left in staff-only hands, if the intention is for the family to have a major impact on the metaplot. So staff still retains some executive control, but can be hands-off with the rest of the family as needed.
When I was in the US I was told that it's apparently better to write a zero dollar tip receipt and just give your server, or whomever, cash. Due to taxes, or somesuch. Is there any truth to that idea?

There is a slow movement in the United States to move away from tips towards a better wage for service workers, but it is exceedingly slow.
As all societal change is, alas.
