I just can't see it this way, what with all the Jedi Knights and Jedi Masters who get mowed down in the prequels. Maybe if you gave them Skywalker's script immunity, along with his Jedi powers? I'd have to think about that.
But then, if I viewed his abilities as making for a galaxy-shaking juggernaut, I'd probably feel the same way you do. To me the abilities in and of themselves don't seem all that impressive. C'est la guerre!
Poor decisions have been made.
There's always a tension between what players want to do and what remaining true to the source material demands, and everyone who runs a game has to pick the point on the spectrum they want their game to occupy. I prefer to err on the side of allowing players to be awesome at the expense of the setting, rather than allowing the setting to be awesome at the expense of the players. If that's a poor decision, I cheerfully admit my guilt.

There's more to a character than his mind-powers. At the end of RotJ, Luke can essentially command an armada, without having to mind trick anybody. If there were a whole bunch of Skywalkers, they could command the New Republic fleet, quash the Imperial Remnant, assume control of Nar Shaddaa, and set up Skywalker-governed regions on the Outer Rim all at the same time as they're rebuilding the Jedi Academy. That's the sort of setting-rewriting silliness I'm afraid of if everyone gets to be a full-powered Witcher or Sorceress.
Paranoia aside, I don't see why anyone needs to be able to enslave dragons or rain down fire to destroy entire armies. There are plenty of smaller awesome things for people to do, and unless you're playing a game like Exalted or Scion (where things get even bigger), having that level of shenanigans in play makes weaker awesomeness feel less awesome. You jump the shark and then nothing short of shark-jumping is ever good enough.

Oddly, this is the exact sort of think-fail that I think causes good TV drama shows to spiral out into the Ridiculousness. They did X last year, so to step it up, they have to do Y this year, then Z next year.. and eventually the show loses the attraction of realistic immersion.
Games can be like this, as can characters.

Alright here is my idea for a Witcher MUSH that focused mostly on Witchers.
The game would take place far enough into the future that current major characters have passed into legend/history, perhaps a 100 years or so. Because of the events of the Witcher 3 the world is plagued with a new wave of monsters that were released during the mini-Confluence of Spheres that happened during the finale of the Witcher 3. The current Witchers of the world managed for some time, but by the end of the century they came together to make a final decision, bring back the tradition of making new Witchers. But, they wanted to avoid mistakes that were made in the past.
First, all the Witcher schools were combined into a single school with many aspects, the school of the Chimera. All the facets of the various schools (Wolf, Griffon, Cat, Bear, Snake ect) are combined in this single school, and while there is now only one school, Witchers still specialize in specific aspects, so the factions of Wolf, Griffon, Cat, Bear, Snake still exist.
This combination of schools is mainly to avoid the history of the Cat, where Witchers of that school became glorified thugs and assassins, and fell off the Path. It also to divide the various powers of a Witcher. Witchers become much more specialized. With Wolf Witchers being excellent at tracking. Griffons at Sign mastery, Snakes with Alchemy. This would also generate the need for "squads" of Witchers to handle contracts.
By splitting the various powers the process to become a Witcher would also become a bit less strenuous with a slightly higher survival rate. (I actually have an idea for a plot line where a foreign King would approach the Witchers with demands to hand over the process to make Witchers, in hopes of creating super soldiers, ala Witcher 1)
Thus the game would be focused on the specific school in the contracts it handles, the inner politics of the various factions, and of course outside forces trying to influence the school.

After the 48 hour bender from the night before, the tired lawyer awoke from his coke and semen covered coma. The groupie from across the country that played his IC sister snored loudly next to him, her foot dipped into one of the twelve cat food bowls that surrounded the bed. Logging on to his favorite MUSH of the month he gasped when he saw the foreboding text splash cross the screen of black, white, and neon-cyan. "You have been site banned."
"B-but my request for my Dragon was suppose to be finished today... DAMNIT' I"LL MAKE MY OWN MU*! After... I finish looking at my high school gym class yearbook."

I really want to read this thread, because I would be all about a Witcher MU, but goddamnti I'm still only about 10 hours into the game, and I really don't want to ruin anything for myself.

Its amazing! I finished with 100 hours under my belt, don't spoil it, this thread will still be around when you're done.

@FiranSurvivor Finished it just an hour ago. Worth the time in not spoiling myself. Best game I've played in probably the last two years or so. As much as I love Dragon Age, this was the game it tired so hard to be in terms of scale and grandness, yet couldn't quite cross the finish line.

Just finished it last night, I'm really happy with it, the setting was so well realized, it felt like an actual world rather than just a game background.

@Rook Honestly, just play on 2 and 3. I did. A lot of the stuff they reference in conversation I've noticed comes more from the books .
