I have meal prep containers in the freezer with enchilada filling. Spinach, black beans, diced tomatoes, corn and ground beef. All cooked. Enchilada sauce spooned over it and slathered in mild cheddar. No one else in the house eats it. But when I can’t be arsed to make dinner or I just want to hide in the bedroom and who the fuck gives two shits about my teenager and my husband, I grab one, throw in chef mike and 5 minutes later I scurry back to my bedroom with some flour tortilla’s and close the door. I can stand in the kitchen for five minutes. Keeps for months in the freezer. They rarely last one month. When I get down to two containers I get the ingredients for more and make another batch. It’s comfort food and halfway decently healthy and fuck the world I want to curl up in bed and eat it without being bothered. That’s my go to depression meal. Thank you Martha stewart/Marley spoon for that recipe.

@Cobaltasaurus Meowjuana 'Kalico Kush" You can get it at the pet stores or online. I bring it with me when I'm doing drop-in's on the high stress Cats. It's a mix of traditional catnip and Valerian root. Ollie is a ridiculously high strung stray that got adopted, will beat the shit out of his owner, but I bring that with me and he is my -friend- and he calms, gives me his belly, closes his eyes. All the signs. He does it for her too when she uses it.

There was a baddie at a big gala scene. I was playing an agent. Biiig gala, super fancy. I always carried the tranquilizer gun our agents were supposed to carry. I shot the guy. Dead to right, he was our boogey man. Bless staff and their armored ice cream truck the plowed into the middle of this gala to try and get their guy. They snagged some other pc’s in the process too but I don’t think they saved their bad guy. Staff ran with it all. I felt bad, realized I probably shouldn’t have done that years later, it gets reminisced about by others. That armored ice cream truck plowing through a police gala.

My roommate in college. "Sarahn i will be the only girl in this group, i don't want to go alone. Can you come for the first meeting?" It was a tabketop group of 5 guys ranging from old school to7 years older.
They owned the local gaming store. I think I was bribed with a life size han solo cardboard stand up. We stuck around, hell they gave me a job in the store between jobs till I picked up another. They added my husband in - thats a long story that eventually saw one guy leave the group in a snit. They were there when we had our kid and our subsequent wedding. They helped me through my husband being deployed, we traveled across the border every two weeks for 4 hours for gaming night with them when I immigrated to the US.
They were my portal to all this. We are meeting up at gencon next year if money permits. I can't imagine life without scott the elder, scott the youngern geroge the computer guru, bart the stoic, chris the never aging, andrea the knitter. They hijacked my wedding even, five minutes to have me combat my maid of honour in - we played tt star trek - a rite of combat to marry my spouse. Complete with lirpa's and tgey supplied the dice for rolling to have us kiss.
Man. Memory lane. Nerd origins are fun.

@surreality God, were it not for my garden in the summer, I would not have tomato's, green beans etc etc. Fresh produce in the mid-west that isn't -corn- is pricey, it often spoils within two days once you get it here and generally not that great in quality. a head of cauliflower is regularly almost 3 bucks, sometimes dips to close to two or under. Aldi's does their best bringing in fresh fruits and veggies. But come winter, you're fucked and my budget for feeding a diabetic has to stretch far if I don't want to revert to shitty food. But during the mid to late summer, I'm feeding us out of our garden.
So yeah, low income, it's a bitch to eat healthy. It can be done, but usually involves buying when cheap and freezing stuff or pre-making and freezing meals.

@kestrel Oooh! Will try those too, they looks like things the toddlers can get on a chair and help make too! Seriously, you guys are great. Far better a resource that Reddit's Vegan sub was. They were too focused on trying to get me to go vegan instead of helping me find vegan adaptations for the toddler.and make her feel included instead of excluded.
